Scallion pancake 蔥油餅

Ingredients:

All purpose flour 中筋麵粉300g

Hot water 滾水125g

Cold water 冷水60g

Salt 塩 1tsp

Oil 豬油 to taste

Pepper胡椒 to taste

Scallions 蔥花 to taste

Steps:

Put the flour in a bowl. Pour in the hot water stirring, then the cold water.                                中筋麵粉跟塩放在盆中,沖入滾中攪拌後再倒入冷水拌勻。 

Put the dough onto a table and knead it until smooth. Rest for 20 minutes.
                               放至桌上搓揉,大約3分鐘,揉至沒有麵粉即可,蓋上保鮮膜或是鍋蓋(我是直接用鋼盆倒蓋),鬆弛20分鐘。 

Sprinkle some flour on the table and roll the dough into a rectangle. Spread on the oil, pepper and scallions. Then, roll it up. And cut it into 6 part. Rest for another hour.
桌上灑一些麵粉,將麵糰擀成長方形,剛開始較不好擀開,慢慢擀,大約1~2分鐘就擀好了,抹上豬油,撒上胡椒粉,蔥花。 再捲起來。切成六塊。鬆弛1個小時。

Roll it out into a circle then fry in a pan.                                                                                                   桌上灑少許的麵粉,將麵糰擀開。並在平底鍋煎。
